Panch Phoran. A Bengali mix of equal portions of fennel seed, mustard seed, fenugreek seed, cummin seed and onion (kalonji) seed. Most often used in whole form, but can be ground. Masalas should be stored in dark airtight jars and as a rule improve with a bit of age.
